„Mátrai borzaska” with zucchini and mashed potatoes

INGREDIENTS

Meat:

  • 5 kg of zucchini

  • 0,5 kg chicken breast

  • 3 cloves of garlic

  • two pieces of egg

  • four tablespoons of starch

  • four teaspoons of flour

  • salt

  • pepper

  • sour cream

  • trappist cheese

  • plenty of oil for frying

Mashed potatoes:

  • 1 kg potatoes

  • 2 decilitres of milk

  • 7 decagrams butter

  • 1 tablespoon sour cream

  • salt

  • nutmeg

STORY

My partner and I both really like „mátrai borzaska”, but we wanted to eat something lighter. We got lots of zucchini from our relatives that grew in their garden and we were wondering what we could do with it. So I started scouring the internet for a way to combine these two great dishes and found a really good recipe that we’ve been using ever since, and usually make it for more special occasions because of its difficulty.

It’s great in this recipe that only the potato peel, the garlic peel and the egg shell go to waste, but the winner will be able to put them in their brand new composter

If you can, buy from local small-scale producers to support them, and you can cook with the freshest ingredients possible.

DIRECTIONS

1. Grate the zucchini into a bowl using a large-holed grater, sprinkle with two teaspoons of salt and leave to stand for 15 minutes. 
2. Meanwhile, cut the chicken breasts in half, season with salt and pepper and set aside.
3. When the time is up, squeeze out the juices well and place in a mixing bowl. Add the salt, pepper, eggs, grated garlic and starch and leave to stand again for 5 minutes.
4. After the time has elapsed, heat about 2 cm of oil in a frying pan over medium heat, roll the meat into the mixture (feel free to help with your hands) and fry until golden brown on both sides.
5. For the mashed potatoes, peel the potatoes and boil them in plenty of salted water until tender. While the potatoes are still warm (!), mash them in a potato masher, add the butter and when it has melted, add the milk, sour cream salt and grated nutmeg and mix until homogeneous.
6. Serve the meat with grated cheese and sour cream and the potatoes, and sprinkle with freshly chopped parsley.Enjoy your meal!
